A Bacon Cheeseburger Salad? Yes, Please.

So, here's a story. Years ago, my family and I were talking about our favorite foods, and while they were saying things like "candied yams" and "peach cobbler," I said simply, "sandwiches." For some reason, everyone thought that was the most hilarious thing on earth, and to this day, my uncle still makes fun of me for it. I mean, I guess it is kind of a funny thing for a chubby kid to say, but it's not *that* funny.

Well, today, sandwiches are honestly still my favorite food. (Yes, ALL the sandwiches.) There's not a sandwich I don't love. But since I'm deep into this low carb lifestyle, I haven't had a proper sandwich in forever. Still, you guys know how I roll, gotta turn lemons into lemonade... which is why I love making my favorite sandwiches into salads. 

I'm not sure you'd classify a cheeseburger as a sandwich—burgers kinda have their own category. However, they have all the elements of a sandwich (meat and fixins stuffed in between two slices of bread), and to me, that means I can turn them into a salad. This recipe was born out of my desire for, obviously, a bacon cheeseburger, and it totally hit the spot and killed my craving. As written, it lists some of my favorite cheeseburger toppings. Feel free to leave some out or add in as you like! Let's get to it.

Serves 4


  • 1 lb ground beef (I prefer grassfed, 80/20)
  • 4 slices of bacon
  • 4 oz cheese (I use cheddar)
  • 1 cup grape tomatoes, rinsed (about 32)
  • 1 tbsp ketchup
  • 1 tbsp yellow mustard
  • 3 tbsp sugar-free mayonnaise
  • 3 tbsp pickle juice 
  • 3 romaine hearts, rinsed


  1. First, prepare the meats. Fry the bacon in a skillet over medium heat until crisp. Remove from pan to paper towel-lined plate to drain fat.
  2. Empty bacon fat from pan (preferably into a container to save for later!), and cook ground beef over medium heat until brown. Season meat with your favorite seasonings. (For my hamburgers, I like to use Worcestershire sauce, salt, pepper, and garlic powder to taste.) Drain fat from pan and set meat aside to cool.
  3. While meat is cooling, chop lettuce. If serving right away, divide lettuce among four bowls.
  4. Roughly chop cooled and drained bacon.  
  5. Build your salad: divide chopped bacon, cooked ground beef, tomatoes, and cheese equally among the four bowls of lettuce.
  6. Make the dressing: put ketchup, mustard, mayo, and pickle juice in a small bowl and whisk to combine. Pour equal amounts over your four salads.
  7. Enjoy! If making this salad as a salad in a jar, add your ingredients to a mason jar in this order: dressing, tomatoes, ground beef, bacon, cheese, lettuce.

Surprisingly, I like this salad better than an actual cheeseburger. Who woulda thunk? I think next, I'll turn a bbq blue cheese burger into a salad. Yum! What sandwich would you like to see turned into a salad?
