Pork Fried Cauliflower Rice (low carb)


  • 2 cups cubed pork
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 egg
  • 1 cup steamed broccoli, chopped
  • 1 head cauliflower
  • 2 tbs liquid coconut aminos
  • 4 scallions, chopped
  • 1 head cauliflower
  • 1 tsp + 2 tbs coconut oil
  • 1 tsp sesame oil (optional)


  • Food processor


  1. Rice cauliflower: cut cauliflower into florets, then pulse a few florets at a time in a food processor until rice-like. Put rice in a microwave-safe container.
  2. Microwave rice for 2 mins to parcook it; set aside.
  3. Heat 1 tsp coconut oil in large pan. Scramble eggs, then cook in pan until done. Remove from pan and set aside.
  4. Heat 1 tbs coconut oil over medium heat and cook onion until soft. 
  5. Turn heat to medium high and add remaining tbs coconut oil to pan, then add pork and fry until crisp (about 2 mins). Turn pan to high, and add riced cauliflower, garlic, scallions, scrambled egg, and broccoli to pan. Stir to combine.
  6. Add coconut aminos, and continue stirring for about two minutes. Remove from heat and if using, sprinkle with sesame oil. Enjoy!
