If there's one thing I love, it's salad in a jar. I don't know if I like it so much because it's super convenient or because it's visually impressive, but I make at least three a week. For those of you who haven't heard of salad in a jar, prepare to have your mind blown.

Here's how it works: You take a quart mason jar, then layer your salads in there from heaviest to lightest ingredients, starting from the bottom. Salad dressing goes in first, then your toppings, ending with your lettuce. The beauty of this trick is that you can make salads ahead of time that are already dressed, without worrying about everything getting soggy or having to find a separate, leakproof container for dressing. It's brilliant! I make about three or four at a time, then just grab it in the morning on my way out the door. When you're ready to eat, just dump the salad in a bowl, mix gently, and voila -- lunch is served.

You'll see lots of salads in a jar on this blog, because, well...I make lots of salads in a jar. Today, though, I'm going to share with you my absolute fave: Chicken Cobb. It's the perfect keto salad, delivering lots of healthy fats, while being hearty enough for a full meal that leaves you full til dinner. No wimpy salads over here. Grab your ingredients and let's get to layering.

Serves 1


  • 1/2 avocado
  • 4 oz (about a palm full) cooked chicken, cubed or shredded (poached chicken works great!)
  • 1 hard boiled egg. chopped
  • 8 grape tomatoes, halved
  • 1/4 cup bacon. chopped
  • 1 oz (about 1/4 cup) blue cheese crumbles (omit if avoiding dairy)
  • 1/2 head romaine lettuce, chopped or shredded into ribbons
  • 1 1/2 tbs red wine vinegar
  • 1 1/2 tbs olive or avocado oil
  • Salt and pepper



  1. Pour olive/avocado oil and red wine vinegar in jar, and season with salt and pepper to taste. Stir or lightly shake jar to combine.
  2. Layer the salad ingredients as listed above. Note: Typically, the vinegar and oil, plus the tight pack of the rest of the ingredients, will keep avocado from browning. If you find that your avocado is turning more than you'd like, feel free to add it right before you eat the salad.
  3. Screw top on jar, refrigerate, and enjoy!

Simple! I should note that a traditional cobb salad includes onions. While I don't have anything against onions, they do pack more carbs than other veggies, so I don't usually add them to my salad. In case you're wondering, yes -- tomatoes are also a higher carb vegetable. However, tomatoes are an essential for me! If you can take or leave tomatoes, but just have to have those onions, feel free to sub em out.
